Bran Muffins

Ingredients

  • 3 cups Great River Graham Flour
  • 1/2 cup Great River Soy Flour
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons baking soda
  • 1/2 cup raisins or other cut up dried fruit
  • 1 egg
  • 2 cups buttermilk
  • 1/3 cup softened butter or oil
  • 1/3 cup honey or 1/2 cup brown sugar or 1/3 cup maple syrup (excellent!)

Instructions

  1. Preheat oven to 350 degrees. Combine first four ingredients in small bowl and blend. Beat egg together with buttermilk, butter and honey until smooth. Add dry ingredients to milk mixture. Stir just enough to moisten. Over mixing will create a tough muffin. Fill greased muffin tins 2/3 full. Bake 20-25 minutes.
