Buttermilk Pancake Mix


  • 2 eggs
  • 1/2 c. of water
  • 1 c. of mix
  • 1 tablespoon of oil


    Preparation for two:
  1. Beat two eggs and 1/2 c. of water.
  2. Add one c. of mix, 1 tablespoon of oil and stir until blended.
  3. Cook on a hot, lightly greased griddle.
  4. For waffles:
  5. Separate the eggs and beat the whites stiff.
  6. Beat the yolks and add to water then stir in the mix.
  7. Add 1/3 c. melted and slightly cooled butter to the batter and fold in with a wire whisk.
