Buttermilk Pancake Mix
- 2 eggs
- 1/2 c. of water
- 1 c. of mix
- 1 tablespoon of oil
- Beat two eggs and 1/2 c. of water.
- Add one c. of mix, 1 tablespoon of oil and stir until blended.
- Cook on a hot, lightly greased griddle.
- Separate the eggs and beat the whites stiff.
- Beat the yolks and add to water then stir in the mix.
- Add 1/3 c. melted and slightly cooled butter to the batter and fold in with a wire whisk.
