Corn and Oat Orange-Prune Coffee Bread


  • 2 eggs
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 3 tablespoons grated organic orange peel
  • 4 cups Great River Corn and Oat Pancake Mix
  • 1 1/2 cups chopped prunes
  • 1 cup orange juice


  1. Preheat oven to 350 degrees. Beat eggs in small mixing bowl, then stir in sugar, honey and orange peel. Place mix in large mixing bowl. Add chopped prunes and stir with a fork, separating prune pieces. Stir egg mixture into dry ingredients alternately with orange juice. Mix by hand one minute. Pour into greased tube pan and bake about 45 minutes, or until golden. Cool ten minutes and remove from pan to cool completely.
