Buttermilk Pancake Mix

Preparation for two:
Beat two eggs and 1/2 c. of water. Add one c. of mix, 1 tablespoon of oil and stir until blended. Cook on a hot, lightly greased griddle. For waffles: Separate the eggs and beat the whites stiff. Beat the yolks and add to water then stir in the mix. Add 1/3 c. melted and slightly cooled butter to the batter and fold in with a wire whisk.
