3 cups Great River Organic Milling Graham Flour
½ cup Great River Milling, Gluten Free, Super-Fine Almond Flour
½ tbsp salt
1 ¼ tsp baking soda
2 cups buttermilk
⅓ cup softened butter or oil
⅓ cup honey or 1/2 cup brown sugar or 1/3 cup maple syrup (excellent!)
½ cup raisins or alternate desired dried fruit *optional
Preheat oven to 350 degrees.
Combine first four ingredients in small bowl and blend.
Beat egg together with buttermilk, butter and honey until smooth.
Add dry ingredients to milk mixture. Stir just enough to moisten. Over mixing will create a tough muffin.
Fill greased muffin tins 2/3 full.
Bake 20-25 minutes.
