Corn and Oat Muffins

Corn and Oat Pancake Mix Corn and Oat Muffins

 2 cups Great River Organic Milling Corn and Oat Pancake Mix
 1 beaten egg
 2 tbsp honey
 ¼ cup oil
 ¾ cup milk

Preheat oven to 400 degrees.


For 12 muffins, combine 1 egg, 2 Tablespoons honey, 1/4 cup oil, and 3/4 cup milk.


Pour in two cups Great River Corn and Oat Pancake Mix, and mix until pancake mix is moistened. Spoon into greased muffin cups.


Bake for 18-20 minutes.
