Favorite Applesauce Cake

Moist fall flavored bread recipe. Egg free! With applesauce substitute.

made with Great River Organic Milling Whole Wheat Pastry Flour

 4 cups Great River Organic Milling Whole Wheat Pastry Flour
 4 tsp baking soda
 1 ¼ tsp salt
 ½ tsp nutmeg
 ½ tsp cloves
 2 tbsp cocoa powder
 1 cup honey
 1 cup canola oil
 3 cups unsweetened applesauce, warm
 ½ cup raisins
 ½ cup chopped walnuts
 Cream Cheese Frosting, if desired

Preheat oven to 400 degrees.


Stir together flour, soda, salt, spices and cocoa. In a large mixing bowl combine oil and honey. Beat until well blended. Stir in the applesauce, blending thoroughly.


Add dry ingredients, blending well. Stir in raisins and walnuts.


Spread batter in two 9" x 9" or one 9" x 13" greased pans. Bake in 400 degree oven for 10 minutes, then reduce oven temperature to 375 degree and bake about 20 minutes longer. A toothpick inserted in center should come out clean.
